Armenian Pizza- Lahmejun
Ingredients:
Dough:1 pkt yeast1/4 cup warm wateror 1 cake compressed yeast crumbled in 1/4 cup lukewarm water1 1/2 tsp sugar1 1/2 tsp salt3/4 cup warm water1/4 cup soft shortening ( I use Crisco type )About 3 cups flour- see belowMeat Mixture:1 1/4 lb lean ground lamb2/3 cup fresh chopped parsley1/2 cup fresh chopped green or red bell pepper1 large garlic clove minced or use 21/4 to 1/2 tsp allspice1/4 to 1/2 tsp black p[epper1 pinch red hot pepper1 3/4 cup to 2 cups canned tomatoes mashed ( or half canned and half fresh ripe, grind ripe ones )3 Tbs tomato paste3 to 4 tsp salt
Method:
Dough:dissolve yeast in water.Stir in the sugar, salt, water and shortening.Blend in 2 3/4 cups to 3 cups flour or enough to make a stiff dough.Knead on a floured surface until smooth and elastic.Cover and let rise double in a warm place.Prepare meat mixture.Mix all meat mixture ingredients together.You will need to divde into about 12 portion or about 1/3 cup for each pizzaPunch down dough and divide into 12 pieces.Cover and let sit 15 minutes, 2 inches aprt on floured surfaceRoll out each piece to a 7 or 8 inch circlePlace circles on a cookie or baking sheet a few inches aprt.Spread each with 1/3 of the meat mixture.Bake first in a 500F or very hot oven about 5 to 6 minutes.Then broil 5 inches from top heat another 5 to 6 minutes or meat is light brown.Bake and broil all in this manner.Cool and store leftovers refrigerated covered.These freeze extremely well.Thawing is not necessary, just heat under the broiler.Note: 1/3 cup of the filling will not make a heavy laden pizza but I like it that way.You may also like a spicey sauce and so season the meat filling to taste.This can easily be made on the grilled for gtilled pizza !
