Grilled Chicken Sate With Peanut Sauce
Ingredients:
3 tablespoons light soy sauce2 tablespoons lemon juice1/4 teaspoon curry powder (or to taste)1/16 teaspoon pepper1 clove garlic, minced1 Lb boneless, chicken thighs( or breasts, but thighs have more flavor!)2 tablespoons vegetable oil***Peanut Sauce***1 teaspoon vegetable oil1/4 cup chopped onion1/2 teaspoon ginger root, minced1 Tsp Red pepper flakes1/2 cup peanut butter1 cup water1 tablespoon light soy sauce
Method:
In small bowl, stir together soy sauce, lemon juice, curry powder, pepper and garlic Cut chicken in 1" cubes Add chicken to marinade and toss to coat,marinate 30 minutes, stirring occasionally.Prepare the peanut sauce:In 1 quart saucepan, heat oil over medium heat Add onion, pepper flakes,ginger and pepper. Cook, stirring frequently, 1 minute Stir in peanut butter Gradually stir in water and soy sauce until well blended Bring to boil, stirring constantly until sauce thickens Serve hot or room temperature.Rinse bamboo skewers in water.Thread with chicken pieces and brush with oil.Grill, until done, turning occasionally.Serve with Peanut Sauce
