Alpha Muffins


  • Wet ingredients
  • 5 cups unsweetened applesauce
  • 1 container 675 gm molasses
  • 1 cup low fat plain yogurt or buttermile
  • 2 eggs
  • Mix together in extra large bowl
  • After mixing stir in
  • 1 cup dried dates
  • 1 cup of mixed dried fruit
  • Dry ingredients
  • 2 cups flour (whole wheat, oat, soy)
  • 1 cup natural bran
  • 1 cup wheat germ
  • 1 cup ground flax
  • 3 cups rolled oats
  • 1 cup unsweetened coconut
  • 1 cup sunflower seed (or a mixture of seeds of any choice)
  • 1 cup flaked almonds
  • 1 cup raisins
  • 6 teaspoons baking powder
  • 2 teaspoons baking soda
  • 4 teaspoons cinnamon

  • Method:

  • Mix all dry ingredients together
  • Add dry mixture to wet mixture and mix thoroughly.
  • If it seems too dry, add more yogurt, if its too wet add more bran or wheat germ.
  • Spray muffin tins
  • Bake @ 350 for 20 to 25 mins until inserted toothpick comes out clean.
  • Be careful becasue they will burn if on the bottom rack.
