Broccoli And Cheese Casserole


  • 2 small boxes frozen chopped broccoli, thawed (or one bag)
  • 3 green onions, chopped (tops and bottoms)
  • 1/2-cup mayo
  • 1 can cream of mushroom soup
  • 8-oz mild cheddar cheese, freshly grated
  • 1 stack of Ritz crackers, crushed
  • 1 stick melted margarine

  • Method:

  • Preheat oven to 350°. Cook broccoli a few minutes, drain and put in buttered rectangular baking dish. Mix onions, mayonnaise, soup and cheese and spread over the top of the broccoli. Sprinkle the crushed crackers over the top of everything and drizzle with the melted margarine. Bake in the preheated oven for 25-35 minutes. Let sit for at least 5 minutes before serving.
