Tuna Macaroni Salad

Ingredients:

  • 1 lb. small shells
  • Mayonnaise to taste; at least 3 cups
  • 1 lg can of light-meat tuna packed in water; drained well
  • 4 hard- boiled eggs, cooled and chopped
  • 1 tsp. yellow mustard
  • 5 stalks celery minced and squeezed through a napkin or cheesecloth
  • 1 large carrot shredded and squeezed through a napkin or cheesecloth
  • 2 tbs fresh parsley chopped
  • Sea Salt
  • Course ground pepper; lots of it.
  • Depending on the Party suggestions:
  • Peas
  • Shrimp
  • Red Onion



  • Method:

  • Cook macaroni according to box directions. Drain and cool
  • Combine all of the ingredients
  • Refrigerate and taste before serving to see if needs more mayo, salt or pepper
