Sauteed Escarole With Gigante Beans

Ingredients:

  • Dark leafy tops of two bunches of escarole (washed and trimmed)
  • about 1/2 can of Goya giant white beans (Gigante in Italian)-RINSED
  • 2 cloves of garlic roughly chopped
  • 1 tsp kosher salt
  • 2 TBSP olive oil
  • 1/2 tsp red pepper flakes ( more or less to taste)



  • Method:

  • Heat olive oil in a saute pan.
  • Add the garlic and cook on med/low for about 2 minutes.
  • Add the wet escarole tops and stir well, turning over the leaves until they are bright green and starting to wilt.
  • Add the rinsed beans to the greens and sprinkle with salt and pepper flakes.
  • Stir again well.
  • Continue cooking for about 5 minutes, stirring ocassionally, until all flavours blend.
  • Enjoy!
