Amish Oatmeal Pancakes

Ingredients:

  • 4 cups rolled oats ( can not use quick cooking oats )
  • 1 cup flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • pinch of salt
  • 1 quart buttermilk
  • 4 eggs beaten
  • 1/2 cup butter melted
  • 2 teaspoons vanilla



  • Method:

  • In a large bowl combine all the dry ingredients
  • In a medium bowl combine all the wet ingredients
  • add liquid to dry all at once
  • stir with a fork just until well blended
  • Do not over blend
  • Let stand for 30 minutes batter will thicken
  • If batter becomes to thick add milk one tablespoon at a time until batter thins to your likeness
  • cook on a prepared hot griddle
  • This makes about 24 large pancakes they freeze very well and reheat nicely in the microwave the recipe halves very well also.
