Gluten Free Apple Pie
Ingredients:
Pastry Crust Makes Two Crusts1 1/2 c of gluten-free flour (Bobs Red Mills All Purpose Gluten Free Flour, Avail at Kroger & online)1/2 c of sugar8 tbspn of butter, cut into pieces1 tspn of xanthan gum (Bobs Red Mills)1/3 c of cornstarch1 tbspn of gluten-free vanilla extract (Available online at the Gluten Free Pantry)1 large eggApple Filling7 medium apples, peeled,cored and very thinly sliced1 tspn of ground cinnamon1/4 tspn of salt1/4 tspn of ground nutmeg1/2 c of sugarCrumble Topping3/4 c of light brown sugar1/2 tspn of ground nutmeg3/4 c of gluten-free flour1/3 c of chilled butter, cut into small pieces
Method:
Lets start with the Pastry Crust.Start by mixing the cornstarchand flour.Add the sugar, butter, egg and vanilla and mix until combined.Dust your counter with a bit of flour and take out the mixture and start kneading and folding until well combined.Wrap them both in plastice and put one in the freezer for later and the other in the fridge to chill.Now we are going to do the apple filling.In a large bowl mix apples, sugar, cinnamon, nutmeg and salt.Now allow the juices to mix and just set this aside.Back to the dough.After 20 min remove the dough from the refrigerator and roll into a ball.Roll until the dough is of reagular thickness of a pie.Spary your glass pie dish and place the first crust in it.Grab a fork and poke some holes in the bottom of the crust and on the sides.Preheat your oven to 400 degrees.Spoon apples into your pie crust, mounding in the middle and pouring the sugary juices over top.Now lets make the crumbles for the topIn small bowl mix together brown sugar, flour and nutmeg.Next mix in the chilled butter and cut it in with a fork or other tool until you have a course crumbly mixture.Using all your crumble put it over your apples.Cover the edge of the pie with tin foil and then aloow to bake for 35 minutes or until you notice that the apples are bubblyThen always allow this to cool befor you serve.
