Gluten Free Apple Pie


  • Pastry Crust Makes Two Crusts
  • 1 1/2 c of gluten-free flour (Bobs Red Mills All Purpose Gluten Free Flour, Avail at Kroger & online)
  • 1/2 c of sugar
  • 8 tbspn of butter, cut into pieces
  • 1 tspn of xanthan gum (Bobs Red Mills)
  • 1/3 c of cornstarch
  • 1 tbspn of gluten-free vanilla extract (Available online at the Gluten Free Pantry)
  • 1 large egg
  • Apple Filling
  • 7 medium apples, peeled,cored and very thinly sliced
  • 1 tspn of ground cinnamon
  • 1/4 tspn of salt
  • 1/4 tspn of ground nutmeg
  • 1/2 c of sugar
  • Crumble Topping
  • 3/4 c of light brown sugar
  • 1/2 tspn of ground nutmeg
  • 3/4 c of gluten-free flour
  • 1/3 c of chilled butter, cut into small pieces

  • Method:

  • Lets start with the Pastry Crust.
  • Start by mixing the cornstarchand flour.
  • Add the sugar, butter, egg and vanilla and mix until combined.
  • Dust your counter with a bit of flour and take out the mixture and start kneading and folding until well combined.
  • Wrap them both in plastice and put one in the freezer for later and the other in the fridge to chill.
  • Now we are going to do the apple filling.
  • In a large bowl mix apples, sugar, cinnamon, nutmeg and salt.
  • Now allow the juices to mix and just set this aside.
  • Back to the dough.
  • After 20 min remove the dough from the refrigerator and roll into a ball.
  • Roll until the dough is of reagular thickness of a pie.
  • Spary your glass pie dish and place the first crust in it.
  • Grab a fork and poke some holes in the bottom of the crust and on the sides.
  • Preheat your oven to 400 degrees.
  • Spoon apples into your pie crust, mounding in the middle and pouring the sugary juices over top.
  • Now lets make the crumbles for the top
  • In small bowl mix together brown sugar, flour and nutmeg.
  • Next mix in the chilled butter and cut it in with a fork or other tool until you have a course crumbly mixture.
  • Using all your crumble put it over your apples.
  • Cover the edge of the pie with tin foil and then aloow to bake for 35 minutes or until you notice that the apples are bubbly
  • Then always allow this to cool befor you serve.
