Chicken Targine
Ingredients:
500 grams Chicken thighs on the bone1/2 tsp paprika1/2 cayenne powder1 tsp ground coriander seeds1 tsp ground cumin seeds1 tsp tumeric powder1 carrot, peeled and chopped1 potato, peeled and cubed1/2 red capsicum, diced8 cherry tomatoes, halved1 brown onion, chopped4 garlic cloves, crushed4 tbls lemon juice200grams of canned chickpeasolive oilsalt and pepper
Method:
Rub the spices into the chicken and let sit for about 30 minutesBrown the chicken thighs in the tagine then remove to a plateSaute the garlic and onions till transparent then add the capsicumCook for 2-3 minsAdd the potatoes and cook for another 5 minutesReturn the chicken to the taginePour in 100ml of waterPlace the tomatoes on topSimmer for 20minutes with the lid onTurn the chicken and add the chickpeas and lemon juiceSimmer for another 10 minutes.Check for seasoning.Serve with cous cous
