Talapia With Mango Pineapple Salsa

Ingredients:

  • 3 fresh tilapia filets
  • 2 mangos
  • 2 lemons
  • 2 small roma tomatos
  • 1 can of small pineapple chunks
  • 1 bottle of banana pepper slices
  • 8 oz of sliced fresh large button mushrooms
  • 8 oz of spinach (approx)



  • Method:

  • chop all the mango ingredients by hand and adding a splash of orange juice.
  • put the tilapia on a pan, brush it with olive oil and rub it with sea salt and black pepper. I
  • put the tilapia in the oven at 450 for 5 minutes.
  • While the tilapia is cooking, coat a saute pan with olive oil and garlic salt, toss in the mushrooms.
  • After five minutes open the oven door and spoon large amounts of the salsa on top of each of the filets.
  • broil for another four minutes.
  • add the spinach to the mushrooms, sautee for another two minutes, until the spinach and the mushrooms are soft.
