Talapia With Mango Pineapple Salsa
Ingredients:
3 fresh tilapia filets
2 mangos
2 lemons
2 small roma tomatos
1 can of small pineapple chunks
1 bottle of banana pepper slices
8 oz of sliced fresh large button mushrooms
8 oz of spinach (approx)
Method:
chop all the mango ingredients by hand and adding a splash of orange juice.
put the tilapia on a pan, brush it with olive oil and rub it with sea salt and black pepper. I
put the tilapia in the oven at 450 for 5 minutes.
While the tilapia is cooking, coat a saute pan with olive oil and garlic salt, toss in the mushrooms.
After five minutes open the oven door and spoon large amounts of the salsa on top of each of the filets.
broil for another four minutes.
add the spinach to the mushrooms, sautee for another two minutes, until the spinach and the mushrooms are soft.
