Potato Salad With Homemade Dressing


  • Cooked Dressing:
  • 2 eggs, well beaten
  • 1 cup (scant) sugar
  • ¾ teaspoon salt
  • ½ teaspoon dry mustard
  • 1 tablespoon (heaping) flour
  • ½ cup cider vinegar
  • ¾ cup water
  • Potato Salad ingredients:
  • ½ cup cooked dressing
  • 1 cup mayonnaise (do not use Miracle Whip)
  • 1 tablespoon (or to your taste) prepared mustard
  • salt and pepper, to your taste
  • 6 potatoes, boiled until tender, drained well and diced
  • 4 radishes, very thinly sliced
  • 2 stalks celery, thinly sliced
  • 1 small onion, diced
  • 6 hard-boiled eggs, peeled and diced

  • Method:

  • Place all Cooked Dressing ingredients in a medium saucepan and bring to a gentle simmer; cook until sauce is thickened, stirring constantly. Cool completely and store in a glass container in the refrigerator - dressing will keep for up to a month.
  • To make the potato salad, add the mayonaisse, prepared mustard, salt and pepper to 1/2 cup of the cooked dressing. Prepare the other potato salad ingredients in a large bowl, and gently toss with the dressing mixture. Chill for several hours to allow the flavors to come together.
