Chocolate pecan burfi
Ingredients:
100g/3½oz pecan halves 450g/16oz whole milk powder 200g/7¼oz sugar 200ml/7¼fl oz water ½ tsp ground cardamom 300g/10½oz dark chocolate
Method:
1. Leave 12 pecan halves to one side and chop the remaining nuts into small pieces. 2. Make a sugar syrup by combining the sugar and water in a pan to form a single strand syrup consistency. Remove from heat. 3. Add the milk powder to the sugar syrup and return to the heat. 4. Cook for 2-3 minutes, stirring continuously. 5. Remove from the heat, add the cardamom and chopped pecans. Mix well. 6. Melt the chocolate over a pan of simmering water. 7. Place one-third of the burfi mixture and one-third of the melted chocolate into a separate bowl and mix well. 8. Line a small baking tray with cling film and grease lightly with unflavoured oil. 9. Pour half of the plain burfi mixture into the tray and spread evenly to cover the tray. 10. Next, pour the chocolate burfi on top and once again spread evenly to cover. 11. Now take the remaining plain burfi and spread over the chocolate layer. 12. Finally, pour over the remaining melted chocolate and with a palette knife, smooth and cover evenly. 13. Place the pecan halves in an even pattern over the melted chocolate and chill in the fridge for 40 minutes. 14. Remove and cut into squares, ensuring that each square has a pecan on top.
