Spicy Fried Catfish With Tartar Sauce
Ingredients:
4-6 medium catfish fillets1 1/2 cups plain cornmeal-yellow or white1/2 cup all purpose flour2 teaspoons salt-or to taste1 teaspoon ground black pepper-or to taste1 teaspoon garlic powder-or to taste1 1/2 teaspoons cayenne pepper-or to taste2 cups buttermilk1 tablespoon hot sauceoil-peanut,vegetable,corn,or canolaTartar Sauce:1 cup mayonaise1/4 cup grated sweet onion1 clove minced fresh garlic or 1 teaspoon granulated garlic1/3 cup chopped sweet pickles1 tablespoon lemon juicesalt to taste
Method:
Rinse fillets and pat dry.In a shallow dish combine cormeal,flour,and seasonings. Mix well.In a wide medium bowl,combine buttermilk and hot sauce.Heat 1/2" to 1" of oil in a large cast iron skillet over medium heat until it reaches 350 degrees.Dip each fillet in buttermilk mixture then dredge in cormeal mixture.Fry fish for 5-7 minutes on both sides or until golden brown and flakes easily with fork.Drain on paper towels.Serve with tartar sauce on the side along with french fries,hushpuppies, and cole slaw.Tartar Sauce:Mix all ingredients together in a small bowl.Cover and refrigerate at least one hour before serving.
