Almond Pound Cakes

Ingredients:

  • 1 cup butter, softened
  • 1 1/2 cup sugar
  • 4 eggs
  • 2 teasp. almond extract
  • 2 cups flour
  • 1 teasp baking powder
  • 1/2 teasp. salt
  • 1/2 cup milk



  • Method:

  • in a mixing bowl... cream butter and sugar until fluffy
  • add eggs one at a time beating well after each addition
  • beat in almond extract
  • in small bowl .. combine flour, baking powder, and salt
  • alternately beat dry ingredients and milk into the creamed mixture.
  • beating until well blended
  • spread batter into 4... 3 1/4 x 5 3/4-inch loaf pans that are well greased and floured
  • bake in preheated 350 F oven for 33 - 37 minutes or until a toothpick inserted in center of cake comes out clean
  • cool in pans 10 minutes.
  • remove from pans and cool completely on a wire rack.
  • store in airtight containers
  • makes 4 cakes..
  • they freeze well
