3 tablespoon confectioners sugar plus extra for sprinkling.
Method:
Preheat oven to 450 F. Spray 4 10 ounce souffle dishes with non stick cooking spray.
Mash bananas with lemon juice and vanilla extract
In small bowl, with mixer at high speed, beat egg whites until soft peaks form; gradually sprinkle in 3 tablespoons confectioners sugar, beating until sugar completely dissolves and whites stand in stiff peaks.
With rubber spatula, gently fold beaten egg whites into banana mixture, one third at time.
