Bananas Souffles

Ingredients:

  • 3 medium sized bananas
  • 2 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 3 tablespoon confectioners sugar plus extra for sprinkling.



  • Method:

  • Preheat oven to 450 F. Spray 4 10 ounce souffle dishes with non stick cooking spray.
  • Mash bananas with lemon juice and vanilla extract
  • In small bowl, with mixer at high speed, beat egg whites until soft peaks form; gradually sprinkle in 3 tablespoons confectioners sugar, beating until sugar completely dissolves and whites stand in stiff peaks.
  • With rubber spatula, gently fold beaten egg whites into banana mixture, one third at time.
  • Spoon mixture into soufflĂ© dish; set dishes in jelly - roll pan for easier handling.
  • Bake 15 minutes or until soufflĂ©s are puffed and brown.
