Chicken Burritos With Pineapple Salsa
Ingredients:
Pineapple Salsa1 (8 oz.) can pineapple tidbits,drained.1/2c finely chopped red pepper1Tbs. brown sugar1Tbs.cider vinegarBurritos3 boneless skinless brest halves,cut into bite size strips2tsp. chili powder2tsp oil1(16 oz.)can refried beans8(10")flour tortillas1c.shreaded lettuce1c chopped tomato
Method:
In a small bowl,combine all salsa ingredients;mix well. Refrigerate till servingIn med bowl,combine chicken strips and chili powder;toss to coatevenly. Heat oil in lg. skilletover med. heat until hot. Add chicken;cook and stir 4-5 mins. or until chicken is no longer pink. Add refried beans;cook 2 mins. or until mixture is hot,stirring frequently.Spoon about 1/3c chicken mixture onto each tortilla. Top with 2 Tbs.lettuce and 2Tbs tomato. Fold bottom of tortilla up over filling;fold sides in towards center,overlapping. Fold down top. Serve with pineapple salsa.
