Almond And Strawberry Muffins


  • 185 grs melted butter
  • 1 cup finely groound almonds
  • 6 egg whites lightly beaten
  • 1 cup icing sugar
  • 1/2 cup plain flor
  • 100 grs strawberries thinly sliced
  • Extra icing sugar to dust

  • Method:

  • Pre-heat the oven to moderately hot.
  • Grease 12 muffin tins.
  • Stand on oven tray.
  • Combine butter, ground almonds egg whites, sugar and flour in medium bowl.
  • Stir until just combined.
  • Divide mixture among prepared tins.
  • Scatter with strawberry slices,
  • Bake for about 25 minutes.
  • Let cool for 5 minutes.
  • Turn onto wire rack to cool completely.
  • Serve dusted with a little extra icing sugar.
