Amazing Salmon Souffle
Ingredients:
4 tablespoons butter
4 tablespoons breadcrumbs
8 ounces smoked salmon
6 eggs
12 ounces cottage cheese
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 cup chopped red onion
1/4 cup fresh dill
Method:
Preheat oven to 350 then butter and dust with breadcrumbs 4 ramekins.
Coarsely chop smoked salmon and put aside.
Place all remaining ingredients in a blender container then blend at medium speed for 30 seconds.
Blend at high speed another 15 seconds.
Stir egg mixture into bowl with the salmon then pour mixture into prepared ramekins.
Place equal amount of salmon in each ramekin then bake 45 minutes on a cookie sheet.
Do not open door while cooking.
Remove from oven and allow to sit 5 minutes then serve immediately.
