Combine peanuts and bread slice in food processor;process till finely chopped. Sprinkle salt and pepper evenly over the chicken. Gredge chicken in bread crumb mixture.
Heat oil in large non-stick skillet over med-high heat Cot pan with cooking spray. Add chicken to pan;cook 2 mins each side or till done. serve chicken with pineapple salsa. Garnish with cilantro sprigs.
