Almond Streusel Muffins
Ingredients:
2 cups flour2 teasp. baking powder1/4 teasp. baking soda1/4 teasp. salt1/2 cup sugar2 teasp. finely grated lemon zest1 egg, lightly beaten3/4 cup plus 1 TBSP. buttermilk3 TBSP. vegetable oil.............................................................................................................................Almond Streusel topping.............................................................................................................................6 TBSP. brown sugar2 TBSP. flour1/2 teasp ground allspice2 1/2 TBSP. butter6 TBSP. uncooked regular oats1 TBSP. sliced almonds****1/2 TBSP. finely grated lemon zest**** I sometimes add less oats and more almonds
Method:
In medium bowl: combine flour, baking powder, baking soda, salt, sugar, and lemon zestmake a well in center of flour mixturecombine egg, buttermilk, and oiladd to dry mixturestir just until dry ingredients are moistspoon batter into muffin pans coated with cooking sprayfill 2/3 full....sprinkle with the streusel mixture, evenlypreheat oven to 400F and bake for 15 minutes or until goldenremove from pans immediately to wire rack............................................................................................................................streusel topping.............................................................................................................................in food processor: add brown sugar, flour, allspice: pluse 3 timesadd butter, and pulse 5 times or until it looks like coarse mealtransfer to small bowl and stir in the oats, almonds and lemon zestmakes about 1 cup
