Ambrosia Muffin Cakes
Ingredients:
1 can (8 oz.) crushed pineapple, drained1 can (11 oz.) mandarin orange segments, drained1 large banana, slicedHoney of a Muffin (recipe below)1-1/2 cups thawed Whipped Topping, divided1/4 cup Flake Coconut, toasted--------------------------------HONEY OF A MUFFIN:1-1/3 cups flour1/2 cup sugar1 Tbsp. Baking Powder1/4 tsp. salt1 egg1 cup milk1/3 cup butter or margarine, melted1-1/2 cups honey-flavored multi-grain cereal flakes with oat clusters, any variety
Method:
MIX fruit.SPLIT each muffin into 2 layers. Spoon about 1/4 cup of the fruit mixture and 1 Tbsp. whipped topping onto bottom half of each muffin; cover with top of muffin.TOP each with 1 Tbsp. of the whipped topping and 1 tsp. of the coconut.------------------------------HONEY OF A MUFFIN:PREHEAT oven to 400°F. Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal.SPOON batter into greased or paper-lined muffin pan, filling each cup 2/3 full.BAKE 20 min. or until golden brown. Serve warm.Prep:15 Cook: 20 Makes 12
