Ambrosia Muffin Cakes

Ingredients:

  • 1 can (8 oz.) crushed pineapple, drained
  • 1 can (11 oz.) mandarin orange segments, drained
  • 1 large banana, sliced
  • Honey of a Muffin (recipe below)
  • 1-1/2 cups thawed Whipped Topping, divided
  • 1/4 cup Flake Coconut, toasted

  • HONEY OF A MUFFIN:
  • 1-1/3 cups flour
  • 1/2 cup sugar
  • 1 Tbsp. Baking Powder
  • 1/4 tsp. salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup butter or margarine, melted
  • 1-1/2 cups honey-flavored multi-grain cereal flakes with oat clusters, any variety



  • Method:

  • MIX fruit.
  • SPLIT each muffin into 2 layers. Spoon about 1/4 cup of the fruit mixture and 1 Tbsp. whipped topping onto bottom half of each muffin; cover with top of muffin.
  • TOP each with 1 Tbsp. of the whipped topping and 1 tsp. of the coconut.

  • HONEY OF A MUFFIN:
  • PREHEAT oven to 400°F. Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal.
  • SPOON batter into greased or paper-lined muffin pan, filling each cup 2/3 full.
  • BAKE 20 min. or until golden brown. Serve warm.
