3b Muffins Bran Banana Blueberry
Ingredients:
1 cup wheat bran1 cup mashed bananas3/4 cup plus 2 tbsp. low fat buttermilk2 tablespoons molasses1/4 cup oil (canola is best)1 egg or 1/4 cup egg substitute1-1/2 cups whole wheat flour1 tbsp. baking powder1 tsp. cinnamon1/2 tsp. salt1 cup fresh or frozen blueberries1/2 cup chopped nuts (optional)
Method:
In a large bowl combine bran, mashed banana, and milk, stirring well.Let stand 5 minutes then add molasses, oil, and egg and mix well.In another bowl, combine flour, baking powder, cinnamon and salt and nuts if using.Gently toss blueberries into flour mixture.Stir into the bran mixture until just combined.Spoon into greased or paper lined muffin tins.Bake at 375°F for 20 to 30 minutes.Let cool in pan 10 minutes, then cool on rack, or eat while warm.Makes 12 muffins
