Cheddar Spoon Bread

Ingredients:

  • 1 cup cornmeal
  • 1 tsp salt
  • 1 1/2 cups water
  • 2 Tbsp butter
  • 1 1/2 cups aged Cheddar cheese, grated
  • 1 1/2 cups milk
  • 3 eggs, separated
  • Dash cayenne
  • 1 tsp baking powder



  • Method:

  • In a medium bowl, combine cornmeal and salt, blending well.
  • In a small saucepan, bring water and butter to a boil. Add to the cornmeal mixture, stirring continuously with a wire whisk. Add cheese and stir until melted. Ad milk and beat until smooth. Let mixture stand until cooled.
  • Preheat oven to 375F and lightly butter a 2 quart casserole dish.
  • In a medium bowl, beat egg whites until stiff peaks form.
  • In a separate small bowl, beat egg yolks until thick and light; add cayenne and baking powder and mix well.
  • Fold whites and yolk mixture gently into the cornmeal mixture until combined. Turn into the prepared dish.
  • Bake for 55 to 60 minutes, or until golden and puffy.
  • Serve hot from casserole, with plenty of butter.
