Cheddar Cheese Corn Muffins

Ingredients:

  • 1 1/2 cup all purpose flour
  • 1/2 cup cornmeal
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1 1/2 to 2 cups shredded cheddar cheese
  • 1 egg, beaten
  • 1 stick butter, melted
  • 1 cup milk
  • 1/4 tsp. vanilla



  • Method:

  • Mix dry ingredients together in a medium bowl, then add cheese and mix
  • In a separate bowl, mix egg, butter, milk and vanilla together
  • Add this to the flour and cheese mixture and stir together
  • Spoon into greased muffin tins and bake for 15-20 minutes
