Adis Flaxseed Fruit Muffins

Ingredients:

  • 1 cup whole spelt or wheat flour
  • 1/2 cup white spelt or wheat flour
  • 1/2 cup flaxseed meal, slightly grounded
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 cup buttermilk or yogurt
  • ½ cup honey
  • 2/3 cup dry fruit of your choice, chopped
  • ½ cup brown sugar



  • Method:

  • Mix dry ingredients together in a medium bowl.
  • Beat liquid ingredients in a small bowl; keep fruit in reserve.
  • Stir liquid ingredients into dry ingredients all at once, add fruit and stir until thoroughly moistened but still lumpy.
  • Grease muffin pan or line with paper or foil cups and fill about two-thirds full. Sprinkle brown sugar on top of batter and bake at 400°F 20 to 25 minutes until golden.
  • Cool on a wire rack.
  • Keep tightly covered .
