Aloha Muffins

Ingredients:

  • 1 20 oz. can crushed pineapple
  • 1/2 cup slivered almonds
  • 2 cups flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 3 0z. pkg. cream cheese, softened
  • 2 tsp. vanilla
  • 1 egg
  • 1/2 cup sour cream
  • Glaze
  • 1 tbls. butter, softened
  • 1 cup powdered sugar, sifted
  • 1 tbls. syrup from pineapple



  • Method:

  • Preheat oven to 350
  • Drain pineapple, reserving syrup for glaze
  • In mixing bowl, sift flour, soda and salt
  • In another mixing bowl, cream together sugar, cream cheese, vanilla and egg
  • Add dry ingredients, alternately with sour cream and mix well
  • Fold in pineapple and combine
  • Heavily grease muffin tins
  • Divide almonds among tins
  • Add muffin batter to tins
  • Bake 20 minutes, then check
  • Remove to rack after cooling for 10 minutes
  • When completely cool, glaze muffins
  • Glaze
  • Combine all ingredients and stir until blended
