Aloha Muffins
Ingredients:
1 20 oz. can crushed pineapple1/2 cup slivered almonds2 cups flour1 cup sugar1 tsp. baking soda1 tsp. salt1 3 0z. pkg. cream cheese, softened2 tsp. vanilla1 egg1/2 cup sour creamGlaze1 tbls. butter, softened1 cup powdered sugar, sifted1 tbls. syrup from pineapple
Method:
Preheat oven to 350Drain pineapple, reserving syrup for glazeIn mixing bowl, sift flour, soda and saltIn another mixing bowl, cream together sugar, cream cheese, vanilla and eggAdd dry ingredients, alternately with sour cream and mix wellFold in pineapple and combineHeavily grease muffin tinsDivide almonds among tinsAdd muffin batter to tinsBake 20 minutes, then checkRemove to rack after cooling for 10 minutesWhen completely cool, glaze muffinsGlazeCombine all ingredients and stir until blended
