Grilled Beef With Pineapple Salsa

Ingredients:

  • BEEF
  • 2 tbsp canola oil
  • 2 beef tenderions 3/4 lb each
  • 1 tsp. black pepper
  • 1/2 tsp. ground red pepper
  • 1/2 tsp of salt
  • PINEAPPLE SALSA
  • 1 can pineapple tidbits, drained
  • 4 medium spring onion, sliced
  • 1/4 cup bell pepper, chopped
  • 2 tbsp. cinlantro leaves, chopped
  • 1/2 tsp. greated lime peel
  • 2 tsp. lime juice
  • 1/4 tsp salt



  • Method:

  • Heat grill. Rub tsp of oil into each beef tenderoin, sprinkly with pepper and salt.
  • Carefully brushed grill rack with oil. Place beef on grill over medium heat. Cover grill, cook for 20-30 minutes. Turning occationally, until beef has slightly blush of pink in the center.
  • Meanwhile in medium bowl, mix salsa ingredients. Cut beef into 1/2 inch slices. Serve with salsa.
  • Serve with side of vegetables and mash potatoe.
