Cheddar Cheese Truffles

Ingredients:

  • 2 cups shredded sharp cheddar cheese
  • 1/4 pound cream cheese
  • 1/4 cup softened butter
  • 1/4 cup dry sherry
  • 1 teaspoon grated orange rind
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon nutmeg
  • 1-1/2 cups finely chopped toasted almonds



  • Method:

  • In food processor combine first 7 ingredients and process until smooth.
  • Cover and refrigerate for several hours.
  • Spread almonds on plate.
  • Drop rounded teaspoonfuls of cheese mixture into almonds and roll to coat and form balls.
  • Place in fluted candy papers then cover lightly and refrigerate until ready to serve.
