Grilled Lamb Chops

Ingredients:

  • Rib Lamb Chops - as many as people for appetizer, more if main course
  • Onion - 1/2 medium, chopped fine
  • Garlic Paste - 2T (or equal amount of fresh chopped)
  • Salt - 2t
  • Black Pepper - 1t
  • Cinnamon - 1/4 t
  • Allspice - 1/4 t
  • Lemon Juice - 2T
  • Preserves - 3T (I used Peach-Mango-Orange from Costco)
  • Olive Oil - 2T
  • (Note that all measurements are adjustable to your taste.



  • Method:

  • Cut lamb chops into individual pieces.
  • Place meat end down into gallon Ziplock bag.
  • Make marinade by mixing together all other ingredients. Note that the marinade will taste a bit too salty, but that upon cooking that will not be an issue.
  • Pour marinade into bag, seal, and refrigerate for at least a few hours.
  • Heat gas grill on high. This would be a medium charcoal heat.
  • Place chops on grill for about 5 minutes. Turn and grill another 5 minutes.
  • Note that flare ups are not a problem nor is overcooking as lamb is very oily and will stay wonderful pretty much in spite of your cooking efforts.
  • Place in radiating pattern on serving platter.
  • Enjoy the comments of your guests.
